The FINANCIAL -- London's first ceviche restaurant is set to open next year, showcasing the cuisine of Peru.



Restaurateur Martin Morales and chef Alejandro Bello will open Ceviche in Soho in early March. The launch will follow the popular Ceviche pop-up restaurant, which ran in London last summer.

The restaurant will specialise in Peruvian ceviches, offering sustainably caught fish that has been marinated in lime juice and aji chilli. It will include a dedicated ceviche bar, where diners will be able to watch thenchef in action.

The rest of the menu at Ceviche will mainly be served in small sharing plates, including some of Peru's most famous dishes such as anticuchos, marinated beef heart brochettes; and a variety of causas, whipped cool potato cakes stuffed with crab or prawns.

"In our cuisine we bring together more than 3,000 years of produce and recipes. Through migration, the cuisine of our indigenous ancestors was shaped by culinary influences and ingredients from Spain, Japan, China, West Africa and Italy," Morales explained.

"But we have more than that; a depth and technique to our cuisine that bring together people of all the social groups and races that enjoy and cook our cuisine."

There will also be the Pisco bar, offering Peru's signature Pisco cocktail alongside a range of other cocktails and punches.

Interiors will be developed by Schneider Designers and reflect a playful theme featuring the work of contemporary Peruvian artists, while the restaurant will also play host to Peruvian musicians and poets.

Ceviche is the latest in a string of South American-themed restaurants to open in London, including Brazilian restaurant Cabana, owned by Jamie Barber and David Ponte, which will open at Central St Giles next week, and Sushi Samba, which will serve a blend of Japanese, Brazilian and Peruvian cuisine.

Peru's Lord of Qoyllurit’i joins UN-backed list of intangible heritage

  • Lima, Nov. 27 (ANDINA). The Pilgrimage to the sanctuary of the Lord of Qoyllurit’i in Cusco, Peru was today added to the United Nations-backed list aimed at preserving and spotlighting the planet's
  • most valuable intangible heritage.

    The Intergovernmental Committee for the Safeguarding of Intangible Heritage meeting in Bali (Indonesia) until 29 November, inscribed elements from Colombia, Croatia, Cyprus, Czech Republic, France and Peru on the Representative List of the Intangible Cultural Heritage of Humanity during its morning session on Sunday.

    This brings to nine the number of new elements inscribed on the Representative List this year so far.

    The Pilgrimage to the sanctuary of the Lord of Qoyllurit’i begins 58 days after Easter when people representing eight indigenous villages from around Cusco, Peru travel to the Sinakara sanctuary.

    This religious event plays itself out over 24 hours as people process up and down the mountain ending in the village of Tayancani at sunrise.

    Dances play a central role in the pilgrimage. The Council of Pilgrim Nations and the Brotherhood of the Lord of Qoyllurit’i oversee activities and maintain the rules and codes of behaviour.

    The other six recently-added elements include traditional knowledge of the jaguar shamans of Yuruparí (Colombia); Becarac singing and playing from Eastern Croatia (Croatia); Nijemo Kolo, silent circle dance of the Dalmatian hinterland (Croatia); Tsiattista poetic duelling (Cyprus); Ride of the Kings in the south-east of the Czech Republic; and Equitation in the French tradition (France).

    The Convention for the Safeguarding of Intangible Cultural Heritage was adopted by UNESCO’s General Conference in 2003 and now includes 139 States Parties.

    Only those countries that have ratified the Convention are eligible to present elements for inscription on the Intangible Cultural Heritage Lists.

    The Intergovernmental Committee for the Safeguarding of Intangible Heritage comprises 24 UNESCO Member States, elected for a term of four years. Half the Committee is renewed every two years.
